Karedok- A Sundanese Salad



Karedok is a kind of Indonesian salad, similar with gado-gado, but karedok using raw vegetables, no boil or anything. Karedok is come from West Java,Indonesia. My mother always cook karedok, when i come home.This is an Indonesian salad similar to gado gado but using all raw ingredients. Very easy and super healthy!

Ingredients

- 1 cucumber
- 50g Chinese long beans
- 2 cabbage leaves
- 50g bean sprouts
- 1 clove garlic
- 2 small chillies
- 2cm fresh or 1/4 teaspoon dried kencur (Indonesian galangal)
- 100g roasted peanuts
- 1 teaspoon palm sugar
- 1/2 teaspoon salt
- 1/2 teaspoon shrimp paste
- 1 teaspoon tamarind juice
- 50ml hot water

1. Rinse all the vegetables in warm water, then drain.

2, Slice cucumber, cut Chinese long beans into 3cm pieces and chop cabbage leaves into large pieces. Put all the vegetables include bean sprouts in a plate.

3. To make the peanut sauce: grind garlic, small chilies, kencur, peanuts, palm sugar, salt and shrimp paste in a blender, or if you have pestle and mortar, use that. Add tamarind juice and hot water until smooth.

4. Mix all the vegetables with the peanut sauce. Serves with fried shallots and basil leaves on top.
